Simple, Rich, and Made Ahead

Chocolate salami is a classic no-bake dessert that gets its name from the way it looks when sliced: dark chocolate studded with cookie pieces and dusted in powdered sugar.

The mixture is divided into two logs, wrapped tightly, and chilled until firm. It keeps well, freezes beautifully, and is best sliced cold with a sharp knife.

Great Value alphabet cookies work well here. Break them roughly so the slices have a mix of small crumbs and larger cookie pieces.

Equipment

  • Large mixing bowl
  • Whisk or hand mixer
  • Rubber spatula
  • Small saucepan or microwave-safe bowl for melting chocolate
  • Parchment paper
  • Foil
  • Sharp knife for slicing

Instructions

  1. Melt the chocolate. Melt the dark chocolate and let it cool slightly.
  2. Cream the butter and sugar. In a large bowl, whisk the softened butter and caster sugar until pale, light, and creamy.
  3. Add the eggs. Add the eggs one at a time, whisking well after each addition.
  4. Add the chocolate. Slowly whisk in the melted chocolate until fully combined.
  5. Fold in the cookies. Fold in the broken cookie pieces, leaving some larger chunks for texture.
  6. Shape the logs. Divide the mixture into two portions and place each onto a large sheet of parchment paper.
  7. Roll tightly. Roll each portion into a log shape, twisting the parchment ends to compact the mixture.
  8. Wrap and chill. Wrap each log in foil to help tighten and hold the shape. Chill for at least 6 hours, preferably overnight, and up to 4 days.
  9. Coat and serve. Just before serving, unwrap and roll in powdered sugar to coat. Slice cold with a sharp knife.

Use the right cookies

Dry tea biscuits or plain cookies work best. Great Value alphabet cookies are a good option.

Chill it well

Overnight chilling gives the cleanest slices and helps the logs hold their shape.

Freezes well

Wrap tightly and freeze for longer storage. Slice while cold for the best texture.

Slice It Cold

Chocolate salami is easiest to slice straight from the refrigerator. Use a sharp knife and cut thin rounds so the cookie pieces show through.
